UpsideDown Almond Honey Cake

This  awesome recipe was sent to me by our brandnew NaturalKids team member Dria. It looks totally delicious, and I hope to bake it as soon as I get off the computer today!

"My mom has a small bakery that specializes in whole wheat. She makes bread, cakes and cookies and lots of yummy things.
This cake is a traditional Jewish New Years cake, meant to bless the upcoming year to be sweet as honey (but we love to eat it all year round).
This cake is an upside down cake – the almonds hide at the bottom of the cake tin, and reappear when the cake is turned upside down.

Ingredients fit in a regular long cake pan

100gr butter, melted (1 stick of butter)
1 tightly packed cup of Brown Sugar
1/2 cup + 2 tablespoons of Honey
1/2 cup of Almond flakes, lightly toasted
1 Egg
1 cup of Yogurt or Buttermilk
2 cups of Whole Wheat Flour
1 teaspoon of Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt

Warm the oven to 180 degrees (350 Fahrenheit).
Pour 3 tablespoons of melted butter into the cake tin. Brush the sides of the tin with the butter and spread the remaining butter evenly on the bottom of the tin.
Sprinkle in 1/4 cup of brown sugar.

Dribble 2 tablespoons of honey over the sugar in the tin.

Spread the almonds evenly on the bottom of the tin.

Whisk the egg in a large bowl. Add the remaining sugar (3/4 cup).

Add the remaining butter (4 tablespoons) and 1/2 cup of Honey. Mix slowly and add the Yogurt or Buttermilk. Mix gently.

In another bowl, mix the flour, salt, baking soda and baking powder.
Slowly, add the dry ingredients into the Yogurt mixture. Mix till smooth.

Pour the mixture into the cake tin and smooth out the top of the cake with a spoon.

Bake for 50-60 minutes.


Check if the cake is ready by poking the cake with a toothpick. The cake is ready when the toothpick comes out clean.

Let the cake cool for 5 minutes only. Turn the cake upside down, so the almonds are on top.

If you like your cakes extra sweet dribble some melted honey on top of the cake.


Don't forget to tell me how it turned out. I haven't tried this recipe myself; When I feel like having a slice of cake, I just go over to my mom's :-) "

This looks so good I can't wait to try it! I love that it is made with WW. I usually ruin a batch or two of whatever I am making trying to adapt it to whole wheat flour, but maybe that's just me!
